Steamed Artichoke Recipe

To clean hold by stem and dunk top into deep water remove and shake.  Repeat several times.
Trim the top leaves
Remove bottom row of leaves
Remove stem
Pour about 2 inches of water in pot
Add 2 table spoons of olive oil, some bay leaves and lemon wedges and boil
Place Artichoke top down on elevated rack for about 45 minutes (begin checking at 30 minutes)

In a pressure cooker 15 pounds
12 – 18 minutes
